Chowder Starter

Yellow onion
2 stalks celery
Bacon or pancetta
2 cups white potato
3.5 cups broth

Dice onion and celery and saute until soft.
Add bacon or pancetta and soften or crisp.
Add cubed potato and broth.
Simmer for ten minutes or so, until potato is soft.

Add fish, shellfish, or vegetable.

Leek may be sauteed along with the onion and celery.
