Spinach Manicotti

I created this recipe from the box and changed and deleted some ingredients. It was very well rec'd and even suggested as one course for Xmas dinner!

1 box Barilla manicotti
2 T xtra Virgin olive oil
2 garlic cloves, minced
1 bag (6 oz) fresh spinach, chopped
2 eggs
1 container (15 oz) ricotta cheese
1 t salt
14 oz crushed tomatoes
1/2 cup Mozzarella cheese

1. Boil water for manicotti
2. Preheat oven to 350 degrees
3. Cook manicotti for 7 minutes; drain, rinse in cool water, set aside.
4. Meanwhile, heat oil in large skillet over medium heat. Add garlic to flavor oil.
5. Stir in spinach and continue cooking about 5 minutes. Set aside to cool.
6. In medium sized bowl, beat eggs lightly.
7 Stir in ricotta cheese nad salt.
8 Spread a few T of tomato sauce in bottom of 13 x 9 inch baking dish. Fill manicotti with cheese and spinach mixture, place in dish.
9. Pour remaining sauce over filled shells; sprinkle with cheese.
10. Cover with foil and bake for 30 minutes.
11. Uncover and continue baking for 5 to 10 minutes or until cheese is melted.

Makes 8-9 shells to serve 4 people. Serving size 2 shells.
